Cinnamon Marshmallows

It's Christmas Eve y'all! I intend to spend the day watching the following movies: Miracle on 34th Street, A Charlie Brown Christmas, The Santa Clause, Santa Claus Conquers the Martians, Elf, and all the Christmas episodes of 30 Rock. When my parents get home from work we will have our traditional Christmas Eve dinner: spaghetti and meatballs. It's going to be a holiday extravaganza!

Anyway, I have wanted to make these marshmallows for a few weeks, but I ended up needing to bake many batches of cookies instead. They weren't as difficult to make as I had imagined they would be. It was a two day process; I made the marshmallow mixture in the evening, then allowed it to set overnight and cut them out in the morning. They turned out so well that my mother thinks I should start an Etsy shop to sell marshmallows in varying flavors. I don't know if that's something I should do, but I definitely want to try making other flavors, like lemon or almond.
